Everyone talks about fat free food, low fat food, and we forgot about the Vegan’s, they too need to eat low fat. here’s stuffed potatoes with asparagus and mushrooms
serves 4
4 med potatoes
1 bunch fresh asparagus
6 mushrooms chopped
1 whole zucchini
3 spring onions chopped
1/2 tin crushed or diced tomatoes
basil , oregano and garlic
cook potatoes in microwave for 4 mins, scoop out the centre place in bowl. In a fry pan spray lightly with cooking spray add zucchini, mushrooms, asparagus and herbs, when tender add tin tomatoes and onions then the scooped out potato. Simmer until heated through, place in potato skins and serve.
